Both start as fresh Poblanos, however, Ancho chiles ripen to deep red before harvesting and drying, while Mulato chiles are fully ripened to dark brown. As a result of the longer ripening, Mulato chiles are spicier and smokier with richer dried fruit and chocolate notes.
