The day before serving, start your cauliflower crust.
Place pot of water on stove with 2 inches of water in pot and bring to a boil.
While the water is heating up, cut head of cauliflower. Puree in food processor or ricer – Look for consistency of rice.
Place processed cauliflower in boiling water for 3-4 minutes.
Remove pot from stove and run the cauliflower through a fine strainer.
Using a new dish towel place the cauliflower inside and wring out (be careful, it will be hot).
After you have gotten all of the water out place your “dough” in the refrigerator overnight with dry towels so it can drain all night. Doing this will allow for the moisture to escape and you will be able to get a nice and crispy pizza crust.
Next Day:
Add salt, goat cheese, garlic and cracked egg to the dough.
Spray pan with PAM
Form the dough into a round pizza shape making a crust
Place the formed dough in a 350 degree oven for 20-25 minutes until golden brown
After the dough is baked, top with pizza sauce and cheese
Place back in 350 degree oven for 5 minutes to melt cheese until golden brown.
Use an upside down spatula to carefully loosen crust from pan.
